Principle: 10g flour or the entire wheat flour add  5ml salt water, in the cup to mix 20s , then washes 5min with the salt water, may obtain the gluten. Under the centrifugal action, according to the SB/T10248-95 stipulation method, can calculate the wet gluten content and the gluten index.
